“Oxen are small but they have quite a bit of meat. They have a short neck, wide chest, and a long, very wide back especially near the tail. They are normally gray… The quality of their meat is very good before they are fully grown. The animal rarely weighs more than 350 kg. It is important to try to improve the indigenous race of ox because the import of foreign races has not had good results.

Sheep are of the local race; they have a very long, heart-shaped tail which is very thin at the end. Normally their heads are black, and they don’t tend to have horns or they are short.”
